Sweet Potato & Cheese Corn Quiche

This recipe is perfect for a quick weeknight meal or even more fun served at a brunch. Who says vegetables can’t make their way to your breakfast table? Substitute chicken for tuna if you have picky eaters, and your family will love the rich flavors of sweet potato, sweet corn, and cheese!

Ingredients

1 Sweet potato (peeled and cubed)

1 Egg

2 Sheets of frozen puff pastry

1 cup of Lodi Cream Style Sweet Corn

1/2 cup of canned tuna

1/3 cup of grated cheddar cheese

Method

1. Heat conventional oven to 350°F/180°C.

2. Steam sweet potato for 15 minutes. Mash when soft.

3. Add your creamed corn, tuna, cheese, and egg. Thoroughly mix.

4. Cut pastry into 8 rounds and tuck into a muffin tin.

5. Fill pastry rounds with the mixture and bake for 20 minutes (or until pastry is golden).

6. This dish serves 4 people.
