1 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1 (1 lb.) can Creamed Style Corn
1 egg, slightly beaten
1/2 to 1 cup canola oil (Can use any kind of cooking oil)
1. In a bowl sift together flour, baking powder, and salt.
2. Mix corn and egg; add to dry ingredients, and stir.
3. Heat canola oil in a large skillet over medium heat. Drop batter by large spoonfuls into the hot canola oil. Fry for 2 minutes on each side or until golden brown. Drain on paper towels.
4. This recipe makes 12 fritters.
