Cream corn has been a farm staple for decades and is a symbol of wholesome family goodness. But gone are the days of using cream corn as a mere side dish. This skillet chicken dish will save you time and energy as you create the entire dish in one pan to wow your family. Easy enough for a weeknight meal, but the flavors added by the delicious sweet corn will make you think it’s the weekend.
1 Can of Lodi Cream Style Sweet Corn
1/2 cup of yellow corn (frozen, canned, or fresh)
1.5 lbs. Boneless chicken breast cut into 1-inch strips
1/4 cup of white whole wheat flour
2 tbsp. Unsalted butter
1/4 tsp. Black Pepper
1/2 tsp. Salt
1/2 tsp. Paprika
1. Combine flour, salt, pepper and paprika into a dish.
2. Coat chicken on both sides with your mixture.
3. Melt butter in large skillet over medium-high heat.
4. Add chicken. Cook 2 minutes on each side (or longer if necessary) until browned.
5. Reduce heat to medium-low and cook the chicken through (this may take up to 10 minutes).
6. Add Lodi Canning creamed corn and yellow corn. Stir for 3 minutes.
7. Serve the chicken and corn sauce over brown rice or quinoa.
8. Sprinkle with parsley and sliced green onion.
