Cast Iron Skillet Cowboy Pinto Beans

Ingredients

6 slices of thick bacon, cut in half

1 large onion, diced

2 cloves garlic, minced

1 can green chillis

1 can fire roasted diced tomatoes

600gm Lodi Pinto Beans, drained and rinsed

salt and pepper

sour cream

green onion

cheddar cheese

Method

1. Slice bacon and fry until crispy

2. Add onion and cook for 5 minutes.

3. Add garlic and cook for 1 minute.

4. Add green chillis, tomatoes, Pinto Beans, salt and pepper.

5. Stir until mixed well, cover and simmer on low for 20 minutes.

6. Garnish and serve.

7. This recipe serves 4 people.
