This easy, one-pot Creamed Corn dish is a spin on delicious Mexican Eloté, a popular street food. This dish is creamy and savory with the perfect blend of Creamed Corn, cheese and spices. This Creamed Corn Eloté is a hearty, warm, and very satisfying dish that will enhance your menu.
2 (15 oz. Creamed Style Corn)
2 jalapeno peppers
3/4 cup heavy cream
1/2 cup whole milk
2 tablespoons butter
2 tablespoons sugar
1 tablespoon cornstarch (or 2 tablespoons flour)
1 teaspoon chili powder
1 teaspoon salt
1 lime (juice)
1/2 cup mozzarella cheese or pepperjack, or Monterey jack
1/3 cup cotija or feta cheese for topping
1. In a medium saucepan over medium heat, combine the creamed corn, jalepeno, heavy cream, milk, butter, sugar, cornstarch, chilli powder and salt.
2. Stir and bring to simmer over medium heat and cook until the sauce thickens, approximately 15 minutes.
3. Remove from heat. Add in the juice of the lime and mozzarella cheese and stir to melt the cheese. Season to taste with additional salt, chilli powder, lime, or cheese as desired
4. Top with cotija or feta cheese and serve warm.
