This classic black bean salad is a staple recipe to have in your summer repertoire. It is packed with bright, refreshing flavors like corn, tomatoes, and cilantro, and has a kick from fresh garlic, jalapéno, and red onion.
1 (15 oz) can Lodi Black Beans, drained and rinsed
1 (15 oz) can Lodi Whole Kernel Corn, drained and rinsed
1 medium tomato, diced
1 medium avocado, pitted, peeled and diced
½ small red onion, finely diced
½ cup packed fresh cilantro leaves, finely chopped
1 medium jalapéno, ribs and seeds removed, finely diced
1 small clove of garlic, minced
2 tbsp freshly squeezed lime juice (about 1 lime), plus more if needed
1 tbsp canola or other neutral-tasting oil
½ tsp ground cumin
¼ tsp kosher salt, plus more if needed
¼ tsp freshly ground black pepper
1. Toss all the ingredients together in a large bowl. Taste and season with more lime juice or salt if needed.
